Pumpkin Fritters

The versatility of pumpkin fritters is welcoming as they are ideal for breakfast, lunch, dinner, as an appetiser or as a snack. These sweet fritters are absolutely delicious however you choose to eat them.


For cooking and for use with fritters, the creamier Garden Pumpkin is most frequently served while the somewhat fibrous Belly pumpkin is more suited to soups.


Pumpkin Fritters

2lbs/1kg pumpkin
3 tablespoons brown sugar
2 teaspoons mixed powdered spice or cinnamon
1 egg
1 cup 5oz/155g flour
2 tablespoons milk
2 teaspoons baking powder
Canola oil for frying
Garnish: 2 tablespoons brown sugar mixed with1 teaspoon mixed powdered spice


1 cup pumpkin puree

1 egg, lightly beaten

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon curry powder

1 teaspoon salt

4 cups vegetable oil for frying
